Picked at perfect Ripeness. Cold Soaked for 72 hours before primary Fermentation. Inoculated with Commercial Yeast. During ferment the temperature was kept under control to enhance the red fruit aromas. On 4Balling the free run was transferred to 2nd and 3rd fill American/French Barrels. The wine was matured for 16 Months.
