The grapes were crushed into open concrete fermentors where they stayed for the next ten days. Immediately after crushing, juice was drawn off to improve the colour and body of the wine. The wine was fermented on the skins in contact with French oak chips. During fermentation the wine was punched down by hand five times per day to maximize colour extraction in a gentle manner. After fermentation the wine was matured on French oak chips for 8 months where it also finished malolactic fermentation.
Alvi's Drift Cabernet Sauvignon
Alvi?s Drift cabernet sauvignon has a lovely medium dark colour with a garnet hue. The nose shows blackberry fruit characters with hints of vanilla, chocolate and Christmas cake. The palate is medium bodied with balanced tannins giving the wine a firm yet soft finish.
