The grapes were crushed into open concrete fermentors where they stayed for the next ten days. Immediately after crushing, juice was drawn off to improve the colour and body of the wine. The wine was fermented on skins and punched down by hand five times per day to maximise colour extraction in a gentle manner. After fermentation the wine was matured with French and American oak for 8 months where it also finished malolactic fermentation.
Alvi's Drift Pinotage
The wine has a strong, medium dark colour with a garnet hue. The bouquet and palate are filled with juicy, ripe berry characters with mulberry and blackberry dominating. The tannin structure is well balanced with the oak and fruit. Subtle vanillin oak is integrated with hints of chocolate and dark cherries.
